Freeze-dried food is loved for its long shelf life, high quality, and quick, easy preparation. But once you add hot water and rehydrate it, can it be frozen and used later? Many of our customers ask this and the answer is simple:
Yes, you can freeze fully prepared freeze-dried food, as long as it is handled correctly.
Below, we explain why it’s safe and what you need to keep in mind.
Why it’s safe
The meals we produce are first cooked, then freeze-dried, and finally rehydrated by adding boiling water. This process inactivates bacteria and microorganisms.
Once you add boiling water, the meal essentially becomes just like any other freshly cooked dish and cooked food can safely be frozen when handled with good hygiene and proper cooling.
Important things to remember for safe freezing
1. Good hygiene
Use clean utensils and containers. Any bacteria introduced after preparation can survive freezing.
2. Rapid cooling
Cool the food to below 4°C, ideally using a cold-water bath. Once cooled, place it directly into the freezer.
3. Proper thawing
Thaw meals in the fridge or microwave, not at room temperature. This helps maintain food safety and reduce bacterial growth.
What about nutritional content?
One of the biggest advantages of freeze-dried food is its excellent nutrient retention. The initial drying process causes only small losses, and even after rehydrating, freezing, and thawing, nutrient changes remain low.
Here is a general indication:
- Vitamins (C and B-vitamins): ~10–20% total loss
- Proteins: almost no change
- Fats & carbohydrates: very well preserved
- Minerals: minimal impact
So even after freezing, you’re still getting a nutritious, high-quality meal.
Conclusion
Yes freezing rehydrated freeze-dried food is both safe and practical if you follow the same hygiene principles you would with any cooked meal. Nutritional content remains high, the flavour stays excellent, and you gain the flexibility of preparing meals or portions in advance.
